This blend was Mei's invention — ginger and turmeric folded into ceremonial matcha. She made it every winter morning. After she passed, Chen kept making it exactly the same way. Some things shouldn't change.

Sift
One scoop into a bowl. Sifting removes lumps and makes it smooth.
Pour
Add hot water — not boiling, around 175°F. Just enough to cover.
Whisk
Back and forth until frothy. Then sit down and drink it slowly.
